Ambitious, organised and passionate – this is the Commis. They understand that despite their duties being ‘less exciting’ that their role is critical to consistent quality and the end product. By performing their job efficiently they will be elevated quickly and asked to shadow, then step-in and finally promoted into a more senior role.

What Is A Commis Chef?

The entry level professional and junior in the kitchen brigade. Contending with a great variety of duties and responsibilities from, operating vacuum packing machines, to stock rotation and covering the Chef de Partie (CPD). Incidentally, the CDP is responsible for a section e.g. fish, meat etc. A CPD can be either a Demi Chef de Partie or full CDP. Their responsibility is largely; preparing, cooking, supervising juniors and order lists.

What Does A Commis Chef Do?

There are two levels of Commis Chef. Commis Chef and First Commis. A Commis chef may also run a section under the supervision of a CDP. A First Commis would have a similar role whilst also overseeing the rest of the Commis Chefs in the brigade.

Why Would I Want To Be A Commis Chef?

It is a popular role and position for those entering the professional kitchen with little or no experience, despite holding any relevant qualifications. Whilst the duties are numerous, they are relatively quick to perform. It provides a great insight into the organisation and running a professional kitchen. It is likely that a competent Commis Chef will be promoted swiftly according to their usefulness and level of skill. It therefore provides an excellent pathway to the higher-level roles. The current demand for Commis Chefs is higher, as are the salary levels.

What Qualifications Do I Need?

It is expected that Commis Chef candidates hold a Level 2 culinary qualification, whilst not a legal requirement. This constitutes a foundation of knowledge and skills at professional level. Demonstrating a good ability to perform the role will often lead to filling in for the CDP (when they are called to a different section or training day) and to assist the senior chefs during busy times. All ultimately leading to quick progression and exposure to more advanced cooking.

What Experience Do I Need?

A good command of the classics and core knowledge of professional skills associated with a Level 2 qualification is all that is required. A positive attitude and a good work ethic. A Commis Chef needs to be organised, tidy, hygienic, punctual and energised.

What Are The Key Skills Required?

A Commis Chef, depending on the size of the establishment, is likely to be passing stocks, peeling root vegetables, picking salad leaves, blanching, vacuum packing, rotating stock, cleaning fridges. Before long they will be asked to support the CDP with cookery and order lists.

How Much Does A Commis Chef Earn?

Commis Chefs are much sought after and as a result salaries remain high for this band of chef. Salary will be dependent on the size of the establishment and operation. Also, the location of the company and the Commis Chef’s prior achievements and ongoing potential. According to Indeed, 2023; Commis Chef Salaries range from £19,827 to £27,771. Notably, some of the better and more well-paid jobs won’t feature here, as they will not have to recruit so publicly. Commis Chefs can expect quick progression when found to perform their role well and demonstrate their potential.
