8 weeks of comprehensive culinary arts at advanced level. This is the 3rd and last module which concludes the Level 4 Diploma. Suitable for experienced and existing chefs looking for inspiration, new skills and refinement in their approach.
There are 50+ advanced recipes on this course, here are 10;
- Lacto fermented products
- Trout tartare, apple, caviar, buttermilk split-dressing
- Garganelli sepia, salt fish, vanilla foam
- Meat fruit with brioche
- Game rillette, prunes and potato bread
- Gilthead bream, fricassee, red wine jus
- Galantine of guinea fowl, burnt leeks and curry
- Mille-feuille of blackcurrant parfait with pears
- White chocolate apple, creameux
- Jaffa Patisserie, mirror glaze and chocolate ruffles
Independent culinary training at advanced level or as the last skills module towards Level 4 Diploma.
